Vegan bars to mixed fruit

Ingredients for 4/6 people:

250 g. dried figs

250 g. of stoned dates

175 ml of mango nectar

90 ml of agave nectar

½ teaspoon cardamom powder

½ teaspoon ground ginger

350 g. oatmeal

250 g. wholemeal flour

1 teaspoon baking powder

1 pinch of salt

60 ml of coconut milk

2 tablespoons of coconut oil



In a saucepan put figs and dates cut into small pieces, the mango nectar and 60 ml of agave nectar, cardamom, ginger and cook over medium heat until it comes to a boil.

At this point, lower the heat and stir occasionally leaving even cook for about 10 minutes until a syrup which must be removed from the heat and leave to cool. Whisk the mixture thus obtained and set aside.


In blender, in part, put half the oatmeal and triturateli very finely, then add the rest of the oatmeal, flour, baking powder and salt, mixing them briefly, then add the coconut milk, the agave nectar and coconut oil and blend it all.


Spread 2/3 of mixture obtained on a baking sheet lined with parchment paper and crushed everything, then spread over this layer that of figs and dates and finally cover with the remaining mixture to the oatmeal. Compacted well and cook in preheated oven at 180 ° C for about 20 minutes. Once the cooking time let cool the whole and then cut into bars.
