On a pastry board put the flour then add 125 grams of butter, 125 grams of sugar, 1 egg and 1 egg yolk; season with salt and knead it all quickly; when the mixture is homogenous place the dough for about 1 hour in a cool place covering with a towel.
Meanwhile, sift the ricotta cheese, add 2 egg yolks, the remaining sugar and 30 grams of melted butter then whip with a wooden spoon until the mixture is foamy.
Peel the apple and cut into slices then place it in a dish together with the lemon juice and let soak for 30 minutes.
Take the dough with a rolling pin and roll out the dough not too thin then coat the bottom and sides of a tart mold previously greased with butter.
Cover the dough with the ricotta mixture and on this lie down the apple slices.
Fold the excess dough around the edge creating a cord and then place in the preheated oven at 180 ° C and cook for 40 minutes.
