250 g. flour
130 g. sugar
4 egg yolks
4 tablespoons of cream
1 pinch of salt
grated rind of 2 lemons
130 g. ground almonds
130 g. butter
1 egg yolk
2 tablespoons of milk
4 tablespoons of finely chopped almonds or pistachios.
On a work surface you place the flour and pour in: sugar, egg yolks, cream, salt, lemon zest and chopped almonds.
Divide the butter in flakes on the flour and knead until you get a smooth and homogeneous dough.
Put an hour in the fridge. After the time, with small pieces of dough make sausages of the thickness of a finger and a length of about 20 cm that close on themselves to form donuts.
Mix the egg yolk with milk and brush this mixture with the circles and then sprinkle with the chopped almonds (or with pistachios). Place them on a baking sheet and place in preheated oven for about 15 minutes at a moderate temperature.
