Clean the artichokes by depriving them of the tough outer leaves and tips, then cut them into thin slices and put them in water acidulated with lemon for about 10 minutes.
In a separate bowl prepare the batter by beating eggs with the flour, milk and a pinch of salt.
Remove the artichokes from the water , drain them, then pass them in the batter and fry them in a pan with hot olive oil. Drain them and let them dry on a paper towel.
